White tuna caught in the Cantabrian sea is known as 'Bonito del Norte' (Thunnus alalunga). Part of the tuna family, this kind of tuna is one of the highest quality varieties as it is characterised by its delicious flavour and a finer texture than other varieties. It is caught from June to October, when the fish is in the perfect condition for being caught and consumed. It is also fished sustainably, the MSC certificate guarantees it.
