Fishing in the Cantabrian Sea gets underway in the spring months, when fish (Engraulis encrasicholus) approach the Cantabrian coast to spawn. It is the most optimal time to fish this species, as it has a meatier texture and higher quality. The ships identify schools of fish and surround them from the surface with seine nets, which are dropped into the water. This fishing system is highly selective and environmentally friendly. We bear the MSC seal, which certifies our use of sustainable methods and the traceability of our products.
Behind these white anchovy fillets is a long artisanal preparation process that goes from its selection and maceration with vinegar, to its filleting and final packaging. It is a completely handmade process we do in order to offer an excellent quality product.
