Atlantic Bonito

Bonito del Norte is the name given to albacore tuna (Thunnus alalunga) caught in the Cantabrian Sea. Belonging to the tuna family, Bonito del Norte is one of the highest quality varieties, characterized by its exquisite flavor and a softer texture than other species of tuna. Fishing takes place during the Costera season, from June to October, when the fish is at its optimal point for capture and consumption.

Rod fishing

Bonito fishing is concentrated in the Cantabrian Sea. Albacore tuna is caught using live bait. This is a traditional fishing method that uses rod and hook; this means that each specimen is caught one by one, allowing the selection of the highest quality specimens. This technique does not involve accidental catches of other species nor does it damage the seabed.

Packed in Oil

Early in the morning, the fish is collected at the Santoña fish market, ensuring that the tuna arrives at our factory in the best conditions and within a few hours of being caught. The fact that the tuna is processed fresh gives the product an exceptional texture and white color.

Washing, cutting, and cooking

Bonito is classified by size, gutted, and, after manual washing, prepared for cooking. After several hours of cooking, the ideal texture is achieved. After cooking, it is left to cool at room temperature, and the loins are cut into pieces to select the whitest parts of the bonito.

Packaging

To preserve the product, the Bonito loins are covered in olive oil in the different packaging formats we offer. All these exhaustive processes ensure that the bonito maintains the intrinsic properties of this exquisite fish with its smooth and tender flesh.

Formats and finishes

In addition to tuna in olive oil, we also offer the most prized part of this tuna species, the belly. This part of the fish is highly valued for its excellent flavor and smooth texture, generated by the gelatin in its flesh. It is one of the star products among our wide variety. Besides this product, we also offer albacore tuna in Catalana sauce. This sauce is made with a traditional family technique and recipe, where the key ingredient is paprika, which, combined with the mild flavor of the tuna, creates an intense yet harmonious contrast of flavors.
