Bonito
del Norte


Bonito del Norte refers to white tuna (Thunnus alalunga) caught in the Bay of Biscay. Part of the tuna family, Bonito del Norte is one of the highest quality varieties, characterized by its exquisite flavor and smoother texture compared to other species. Fishing takes place during the coastal season, from June to October, when the fish is at its optimal point for capture and consumption.

Rod and
Reel Fishing

Bonito fishing is concentrated in the Bay of Biscay. White tuna is caught using live bait. This is a traditional method that uses a rod and hook, meaning each specimen is caught individually, allowing for the selection of the highest quality fish. This technique avoids accidental catches of other species and does not harm the seabed.

Very early in the morning, the fish is collected at the Santoña fish market, ensuring that the bonito arrives at our factory in the best conditions and just hours after being caught. The fact that the bonito is processed fresh gives the product an exceptional texture and white color.

The bonito is sorted by size, gutted, and after a manual wash, prepared for cooking. After several hours of cooking, the ideal texture is achieved. After cooking, it is left to cool at room temperature and the loins are cut into pieces to select the whitest parts of the bonito.

To preserve the product, the bonito loins are covered in olive oil in the different packaging formats we offer. All these exhaustive processes ensure that the bonito maintains the intrinsic properties of this exquisite fish with its tender, melt-in-your-mouth flesh.

In addition to bonito in olive oil, we also process the most prized part of this tuna species, the belly. This part of the fish is highly valued for its great flavor and melt-in-your-mouth texture, created by the gelatin in its flesh. It is one of the star products among the wide variety we offer. Besides this product, we also offer Bonito del Norte in Catalan sauce. This sauce is made using a traditional family technique and recipe, where the key ingredient is paprika, which, combined with the smooth flavor of the bonito, creates an intense yet harmonious contrast of flavors.
