Fishing in the Cantabrian Sea begins in the spring months, when the anchovy (Engraulis encrasicholus) approaches the Cantabrian coast to spawn. This is the optimal time to catch this species of fish, as it has a meatier texture and higher quality. Boats identify fishing banks or schools and then surround them from the surface with purse seine nets. Purse seine fishing is very selective and environmentally friendly.
In the preparation of anchovies, the mastery of "the Cantabrian Salters", the slow maturation process, and the careful handling by the "Sobadoras" who skillfully select, manually remove, and trim the anchovy fillets, stand out. This is a process with a strong artisanal character, in which all operations are performed by hand.
