Fishing in the Cantabrian Sea begins in the spring months, when anchovy (Engraulis encrasicholus) approaches the Cantabrian coasts to spawn. This is the optimal time to catch this species of fish, as it has a meatier texture and higher quality. Boats identify the fishing grounds or schools and then proceed to surround them from the surface with purse seine nets. Purse seine fishing is very selective and environmentally friendly. We have the MSC certification, which verifies the use of sustainable methods and the traceability of our products.
Behind these anchovy fillets lies a long artisanal production process, from their selection and marination in vinegar to their filleting and final packaging. It is a completely handmade process to offer a product of excellent quality.
