Fishing in the Cantabrian Sea begins in the spring months, when the anchovy (Engraulis encrasicholus) approaches the Cantabrian coast to spawn. This is the optimal time to catch this species of fish, as it has a meatier texture and higher quality. Boats identify fishing grounds or schools and then proceed to surround them from the surface with purse seines. Purse seine fishing is very selective and environmentally friendly. We have the MSC seal, which certifies the use of sustainable methods and the traceability of our products.
In the preparation of anchovies, the mastery of "the Saladores del Cantábrico," the slow maturation process, and the careful handling carried out by the "Sobadoras" who skillfully select, manually remove, and trim the anchovy fillets are noteworthy.
