Fishing in the Cantabrian Sea begins in the spring months, when anchovies (Engraulis encrasicholus) approach the Cantabrian coasts to spawn. This is the optimal time to catch this species of fish, as it has a meatier texture and higher quality. The boats identify the fishing grounds or schools and then surround them from the surface with purse seine nets. Purse seine fishing is very selective and environmentally friendly. We have the MSC seal that certifies the use of sustainable methods and the traceability of our products.
The production of anchovies highlights the mastery of "the Cantabrian Salters," the slow maturation process, and the careful handling carried out by the "Sobadoras" who skillfully select, manually remove, and trim the anchovy fillets. This is a process with a strong artisanal character, in which all operations are performed by hand.
Fillets: 9-11 approx.
