Fishing in the Cantabrian Sea begins in the spring months when the anchovy (Engraulis encrasicholus) approaches the Cantabrian coast to spawn. This is the optimal time to catch this fish species since it has a fleshier texture and higher quality. The boats identify the fishing grounds or shoals and then proceed to surround them from the surface with purse seine nets. Purse seine fishing is very selective and environmentally friendly. We have the MSC seal that certifies the use of sustainable methods and the traceability of our products.
In the elaboration of anchovies, the mastery of "los Saladores del Cantábrico" stands out, as well as the slow maturation process and the careful handling carried out by the "Sobadoras" who skillfully select, manually remove, and trim the anchovy fillets. This is a process with a marked artisanal character, in which all operations are carried out by hand.
Once opened, cover with brine (wet salt), keep refrigerated, and consume by the date on the label.
