"Northern white tuna" (Thunnus alalunga) refers to the albacore tuna fished in the Cantabrian Sea. Belonging to the tuna family, northern white tuna is one of the highest quality varieties, characterized by its exquisite flavor and a softer texture than other species. Fishing takes place during the coastal season, from June to October, when the fish is at its optimal point for capture and consumption. It is also fished sustainably, guaranteed by the MSC certificate.
