Fishing in the Cantabrian Sea begins in the spring months, when the European anchovy (Engraulis encrasicholus) approaches the Cantabrian coasts to spawn. This is the optimal time to catch this species of fish, as it has a meatier texture and higher quality. Boats identify the fishing grounds or shoals and then proceed to surround them from the surface with purse seine nets. Purse seine fishing is very selective and environmentally friendly.
The production of anchovies stands out for the mastery of the "Salters of the Cantabrian Sea", the slow maturation process, and the careful handling carried out by the "Kneaders" who skillfully select, manually remove, and trim the anchovy fillets. This is a process with a marked artisanal character, in which all operations are performed by hand.
Once opened, cover with oil, keep refrigerated, and consume within 7 days.
