Fishing in the Cantabrian Sea begins in the spring months when the European anchovy (Engraulis encrasicholus) approaches the Cantabrian coast to spawn. This is the optimal time to catch this species of fish, as it has a more fleshy texture and higher quality. Boats identify fishing banks or schools and then proceed to surround them from the surface with purse seines. Purse seine fishing is very selective and environmentally friendly. We have the MSC seal that certifies the use of sustainable methods and the traceability of our products.
The preparation of anchovies highlights the mastery of "the Saladores del Cantábrico," the slow maturation process, and the careful handling carried out by the "Sobadoras" who skillfully select, manually remove, and trim the anchovy fillets. This is a process with a strong artisanal character, in which all operations are carried out by hand.
