Fishing in the Cantabrian Sea begins in the spring months, when the anchovy (Engraulis encrasicolus) approaches the Cantabrian coast to spawn. This is the optimal time to fish this species, as it has a meatier texture and higher quality. Boats identify the fishing banks or schools and then proceed to surround them from the surface with purse seine nets. Purse seine fishing is highly selective and environmentally friendly. We have the MSC seal, which certifies the use of sustainable methods and the traceability of our products.
The production of anchovies highlights the mastery of the "Saladores del Cantábrico," the slow maturation process, and the careful handling by the "Sobadoras" who skillfully select, manually remove, and trim the anchovy fillets. This is a process with a strong artisanal character, in which all operations are performed by hand.
Once opened, cover with oil, keep refrigerated, and consume within 7 days.
