Fishing in the Bay of Biscay begins in the spring months, when the anchovy (Engraulis encrasicholus) approaches the Cantabrian coasts to spawn. This is the optimal time to catch this species of fish, as it has a more fleshy texture and higher quality. Boats identify the fishing grounds or schools and then proceed to surround them from the surface with purse seine nets. Purse seine fishing is very selective and environmentally friendly. We have the MSC seal, which certifies the use of sustainable methods and the traceability of our products.
In the preparation of anchovies, the mastery of the "Saladores del Cantábrico" (Cantabrian Salters) stands out, as does the slow maturation process and the careful handling carried out by the "Sobadoras" (rubbers) who skillfully select, manually remove, and trim the anchovy fillets. This is a process with a strong artisanal character, in which all operations are carried out by hand.
