Fishing in the Cantabrian Sea begins in the spring months, when the anchovy (Engraulis encrasicholus) approaches the Cantabrian coast to spawn. This is the optimal time to fish this species, as it has a meatier texture and higher quality. Boats identify the fishing grounds or shoals and then proceed to surround them from the surface with purse seine nets. Purse seine fishing is very selective and environmentally friendly.

The production of anchovies highlights the mastery of "the Cantabrian Salters," the slow maturation process, and the careful handling performed by the "Sobadoras" who skillfully select, manually remove, and trim the anchovy fillets. This is a process with a strong artisanal character, in which all operations are carried out by hand.
