Fishing in the Cantabrian Sea begins in the spring months when the European anchovy (Engraulis encrasicholus) approaches the Cantabrian coasts to spawn. This is the optimal time to catch this fish species, as it has a meatier texture and higher quality. Boats identify fishing grounds or schools and then proceed to surround them from the surface with purse seine nets. Purse seine fishing is very selective and environmentally friendly. We have the MSC seal that certifies the use of sustainable methods and the traceability of our products.
In the preparation of anchovies, the mastery of "los Saladores del Cantábrico" (the Cantabrian curers) stands out, as does the slow maturation process and the careful handling by the "Sobadoras" (rubbers) who skillfully select, manually remove, and trim the anchovy fillets. This is a process with a distinct artisanal character, where all operations are performed by hand.
