Fishing in the Cantabrian Sea begins in the spring months, when the anchovy (Engraulis encrasicholus) approaches the Cantabrian coasts to spawn. This is the most optimal time to catch this species of fish, as it has a meatier texture and higher quality. Boats identify the fishing grounds or shoals and then proceed to surround them from the surface with purse seine nets. Purse seine fishing is very selective and environmentally friendly.
The preparation of anchovy is characterized by the mastery of "los Saladores del Cantábrico" (Cantabrian Salters), the slow maturation process, and the careful handling carried out by the "Sobadoras" (Kneaders) who skillfully select, manually remove, and trim the anchovy fillets. It is a process with a strong artisanal character, in which all operations are performed by hand.
Fillets: 35-45 approx.
