Fishing in the Cantabrian Sea begins in spring, when the anchovy (Engraulis encrasicholus) approaches the Cantabrian coast to spawn. This is the optimal time to catch this species of fish, as it has a meatier texture and higher quality. Boats identify fishing grounds or schools and then surround them from the surface with purse seine nets. Purse seine fishing is very selective and environmentally friendly. We have the MSC certification, which certifies the use of sustainable methods and the traceability of our products.
In the preparation of anchovies, the skill of "los Saladores del Cantábrico" stands out, as well as the slow maturation process and the careful handling carried out by the "Sobadoras" who expertly select, manually remove, and trim the anchovy fillets. This is a process with a strong artisanal character, in which all operations are performed by hand.
Fillets: 35-45 approx.
