THE TRAVELING ANCHOVY IN...
Aragon
Aragonese gastronomy is distinguished by its authentic flavor and deep roots in rural tradition. This region, located in northeastern Spain, is known for its high-quality agricultural products and robust dishes. Among its most emblematic ingredients are fresh garden vegetables and local lamb meat.
In Aragon, typical dishes include ternasco, a roasted suckling lamb that melts in your mouth, and Aragonese migas, a humble and delicious dish made from stale bread, garlic, olive oil, and often accompanied by grapes or chorizo.
But also its illustrated salad which today, thanks to our chef Javier Ruiz, we are reinventing in this recipe for Illustrated Salad Tacos with Bonito del Norte in an oriental style.
