Aragon

Aragonese gastronomy is distinguished by its authentic flavour and its roots in rural tradition.
This region, located in northeastern Spain, is known for its high-quality agricultural products and hearty dishes.
Among its most emblematic ingredients are local fresh vegetables and lamb meat.

In Aragon, typical dishes include ternasco, a roast suckling lamb that melts in your mouth, and migas aragonesas, a humble and delicious dish made from hard bread, garlic, olive oil, and often served with grapes or chorizo.

Another traditional aragonese dish is the “ensalada ilustrada” (illustrated salad). Which today, with the help of our chef Javier Ruíz, we are reinventing it in a new recipe: illustrated Salad Tacos with White Tuna in Oriental style.
