Anchovy is one of the most common fish in our diet and one of the most appreciated when it comes to eating it, as it offers great versatility when it comes to cooking. Do you know where it comes from and what health benefits it has?

What are anchovies?

The raw material for anchovies is the species of fish known as Engraulis encrasicolus or bocarte. It is a blue fish that lives between two waters at changing depths. Fishing begins in the spring months and is always regulated and limited to ensure sustainable and respectful fishing.

It is a highly prized product for its juiciness and its fleshy texture, which is achieved through fresh processing and artisanal production.

Fresh preparation

Our anchovy production is entirely artisanal and is always prepared fresh, free of additives and preservatives. The raw material arrives early in the morning from the fish market and is prepared less than 8 hours after being caught.

“Las Sobadoras de Santoña” are in charge of filleting and selecting the best fillets in order to offer the best product with the best quality. Once selected, they are marinated for approximately 48 hours with a proprietary formula of water, vinegar and salt that gives the product a characteristic flavour. This formula and its own preparation give the anchovy fillet a very meaty and juicy texture, which can only be achieved through manual production.

Anchovy fillets are classified as semi-preserved, so they are covered in sunflower oil or olive oil of the highest quality for optimal preservation.
