Ingredients:
1 jar of Cantabrian anchovies
1 green pepper
1 onion
1 zucchini
1 tomato
Sweet corn
Olive oil
Fajita seasoning

Preparation:
Chop the pepper, onion, and zucchini.
Heat some olive oil in a pan and fry them.
Wash, peel, and chop the tomato. Add it to the pan with the rest of the vegetables and let it cook for about 5 minutes.
Cut the anchovies into small pieces and add them to the pan so they are well integrated.
Heat the tortillas (in the microwave or in a pan without oil) and fill them with the ingredients (also add lettuce and sweet corn to taste).
Finally, you can season the fajitas and serve them with tomato sauce.
Anchovy and spinach omelet

200 g couscous
200 ml chicken broth
4-5 anchovies
2 shallots
2 small tomatoes

½ lemon
Extra virgin olive oil
Preparation:
Wash and peel the tomatoes, cut them into cubes, and set aside.
Put the chicken broth in a saucepan and bring it to a boil.
When it starts to boil, slowly add the couscous and let it cook for a couple of minutes.
Remove it and let it cool.
Peel and chop the shallots and sauté them in a pan with a good drizzle of oil.
Chop the parsley and add it to the pan when the shallots are almost done.
Also add the anchovies and sauté until they turn into a paste.
Remove from heat and pour over the couscous.
Add the chopped tomato, fresh chopped cilantro, and the juice of half a lemon.
Mix everything and it's ready to eat!
