CANTABRIAN ANCHOVY FILLETS FROM THE CANTABRIAN COAST IN SUNFLOWER OIL, HAND-PREPARED EXCLUSIVELY WITH FISH CAUGHT IN SPRING.
Fishing in the Cantabrian Sea begins in the spring months, when the anchovy (Engraulis encrasicholus) approaches the Cantabrian coasts to spawn. This is the best time to catch this species of fish, since it has a more meaty texture and higher quality. The boats identify the fishing schools or shoals and then proceed to encircle them from the surface with purse seines. Purse seine fishing is very selective and environmentally friendly.
In the elaboration of the anchovy, the mastery of the “Saladores del Cantábrico”, the slow maturation process and the careful handling by the “Sobadoras” who deftly select, manually remove and trim the anchovy fillets stand out. It is a process with a markedly artisanal character, in which all operations are carried out by hand.
