We present to you the “Traveling Anchovy”, a new project that we embark on with the help of chef Javier Ruiz. Every month we are inspired by the gastronomy of a diverse autonomous community from Spain to create a dish using our preserved fish products. Are you ready for the journey?
Chef Javier Ruiz
Javier Ruiz is one of the greatest chefs on the regional scene in Cantabria and a clear exponent of quality cuisine, ingenuity and innovation. He currently runs La Económica in Noja (Cantabria), a gastronomic tavern where technique, flavor and creativity are combined in each dish.
The magic happens at La Económica. Javier uses his culinary art to create unique dishes combining our Cantabrian preserves – anchovies, white-marinated anchovies, albacore white tuna, cod brandade, tapenade, gildas and banderillas – with traditional products from each region of the country. The recipes stand out for their creativity and innovation in addition to being delicious.
First stop… Cantabria
Of course, the first stop had to be the community of Cantabria! Starting with the essence of Cantabrian food, Javier Ruiz has created a surprising recipe consisting of marinated yolk and fried Santonia anchovy, restructuring the traditional “sabao” while adding that special touch of our anchovies.
