The “costera” of “bonito del norte” (in Spanish) refers to the fishing season of albacore tuna (Thunnus alalunga) in the Cantabrian Sea off northern Spain. This tuna species is highly valued for its exceptional quality and flavor.
The fishing season takes place during the summer months, generally between June and October, when these fish migrate from the Central Atlantic to the waters of the Cantabrian Sea in search of warmer temperatures and food.
The traditional hook-and-line and live bait fishing method is used. Fishermen use live bait, such as anchovies or sardines, kept in onboard tanks, to attract the tuna. This sustainable approach allows the fish to be caught individually, one by one, minimizing impact on other species.
