Anchovies: a healthy and delicious snack

 

Anchovies are one of the most common fish in our diet and one of the most versatile to consume, as they offer great flexibility when cooking. Do you know where they come from and what health benefits they have?

What are anchovies?

The raw material for anchovies is the fish species known as Engraulis encrasicolus or European anchovy. It is an oily fish that lives in mid-water at varying depths. Its fishing season begins in the spring months and is always regulated and limited to ensure sustainable and respectful fishing practices.

It is a highly prized product for its juiciness and fleshy texture, achieved through fresh processing and artisanal production.

Fresh preparation

Our anchovies are prepared entirely by hand and always fresh, free of additives and preservatives. The raw material arrives early from the fish market and is processed within 8 hours of being caught.

“Las Sobadoras de Santoña” are responsible for filleting and selecting the best fillets to offer the best product with the highest quality. Once selected, they are marinated for approximately 48 hours with our proprietary formula of water, vinegar, and salt, which gives the product a distinctive flavor. This formula and our unique preparation give the anchovy fillet a very fleshy and juicy texture, which can only be achieved through manual production.

Anchovy fillets are classified as semi-preserved, so they are covered in sunflower or olive oil of the best quality for optimal preservation.
