At Pujadó Solano, we are mainly known for our Santoña anchovies, Cantabrian marinated anchovies (boquerones en vinagre), and bonito del norte (bonito tuna), as these are indeed our flagship products par excellence. However, beyond these products, we also offer other gourmet specialties worth remembering.
Gildas and Banderillas
Our Santoña anchovy and boqueron fillets are delicious on their own, being of exceptional quality, but when combined in a skewer with other pickled ingredients, they achieve a very successful contrast of flavor.
On one hand, we prepare gildas, the classic Basque gastronomy tapa, a combination of piparras, olives, and anchovy or boqueron fillets threaded onto a toothpick.
On the other hand, we have banderillas, which have a similar format to gildas but with slightly different ingredients. Anchovy banderillas come with olives, spring onions, red pepper, and gherkins, while we have two types of boqueron banderillas: one with the same ingredients mentioned but without gherkins – boquerones with olives, spring onions, and red pepper – and the other similar but without spring onions: boquerones with olives and red pepper. As you can see, we have a wide variety of options for consuming Santoña anchovies or boquerones in skewer format, and all are extremely tasty, with top-quality ingredients and artisanally made.

Cod Brandade
Cod brandade is a cream made artisanally by mixing shredded cod with milk, potato, garlic, olive oil, black pepper, and salt. It has a smooth texture and a very delicate and exquisite flavor. It is a very versatile food that can be incorporated into many types of dishes, for example, as an appetizer with canapés or toasts, or as a filling for croquettes, empanadas, or roasted vegetables such as eggplants, tomatoes, or peppers.

Anchovy, Olive, and Caper Tapenade
Our tapenade is a creamy paste resulting from the blend of Santoña anchovies, black olives from Aragon, capers, garlic, lemon, olive oil, and aromatic herbs. It has a very tasty, slightly salty flavor and is perfect to eat as an appetizer, for example, spread on toast, in salads, or as a condiment for vegetables, meat, or fish.

Mussels
Our mussels come from the Galician estuaries and represent the best option for an appetizer alongside some potato chips and a beer. On one hand, we have the classic pickled mussels, and on the other hand, for a few years now, we have incorporated mussels in spicy sauce, a sauce that consists of a combination of tomato, onion, sunflower oil, and spices. An interesting alternative to traditional mussels for those who like stronger flavors.
