CANTABRIAN ANCHOVY FILLETS FROM THE CANTABRIAN COAST IN SUNFLOWER OIL, HAND-PREPARED EXCLUSIVELY WITH FISH CAUGHT IN SPRING AND IN A SUSTAINABLE WAY.

Fishing in the Cantabrian Sea begins in the spring months, when the anchovy (Engraulis encrasicholus) approaches the Cantabrian coasts to spawn. This is the best time to catch this species of fish, since it has a more meaty texture and higher quality. The boats identify the fishing schools or shoals and then proceed to encircle them from the surface with purse seines. Purse seine fishing is very selective and environmentally friendly. We have the MSC seal that certifies the use of sustainable methods and the traceability of our products.

Behind these anchovy fillets hides a long process of artisanal elaboration, from its selection and maceration in vinegar to its filleting and final packaging. It is a totally handmade process to offer a product of excellent quality.

Ingredients: fresh anchovies from the Bay of Biscay (Engraulis encrasicholus), white wine vinegar, sunflower oil and sea salt.
